The Socca is one of gastronomic specialties more typical of the Blue Coast. In the old part of all these coastal cities we can find stalls selling this regional product.Here we leave you the recipe to prepare it at home.
Ingredients for 8 persons:
- 250 g chickpea flour
- 1/2 l of water
- 6 tablespoons olive oil
- 1 teaspoon salt
- Fresh ground pepper
- For cooking: two plates of 40 cm in diameter or one of 70 cm
Preparation time: 15 minutes
Cooking time: 7-9 minutes
Recipe:
In a deep bowl, put cold water and beat the chickpea flour. Add two tablespoons of olive oil and a teaspoon of salt. Mix vigorously to remove lumps. If necessary, sift.
The dough must have the consistency of non-skim milk. If it is too compact, add a little water and mix again.
Preheat the oven in maximum power for 10 minutes. In one or two circular plates, pour the content of four tablespoons of olive oil and to bake for 5 minutes.
Remove the tray from the oven, pour the preparation and disperse evenly. Bake immediately on top of the oven.
After 2 minutes, turn the thermostat to grill position. Let simmer 5 to 7 minutes, so that the crust is golden, even a little burned in some parts.
During cooking, it can be pierced with a knife to prevent bubbles from forming.
Remove from the oven, slice and serve hot adding a little ground pepper. And to enjoy!

Chickpea flour is what gives this recipe a special touch, due to the flavor it provides. However, due to cooking, there is no problem if instead of this type of flour you use wheat flour.
