Fava, the typical product of Santorin

One of the most typical Santorin products are the beans called bean. It is a very traditional ingredient, a type of yellow beans or beans that comes from a fruit called Lathyrus Clymenum and that it is only grown in Santorin and Anafi, a small island near Santorin.

Probably the volcanic soil is responsible for why this product is only grown here and not in all of Greece, but anyway, time and this exclusivity have made it the typical Santorin product. Even some archaeological excavations have found these grains in ancient Akrotiti, south of Santorin, so it is known that it was already cultivated on the island about 3500 years ago.

They are planted in December and harvested in June. Due to a natural process, these beans are left to mature for about a year in underground warehouses and then they are put to dry in the sun, cleaned, peeled and cut to later be sold on the island and throughout the country. Something is even exported.
