The vintage has its origin in the Ancient Greece, When the grapes were harvested, it motivated a great party, it was when the festivals were celebrated in honor of the god Dionysus, they lasted five days, they were called Dionysian feasts, it was one of the most important festivals in Greece.

For six days and six nights the grapes are left in the sun to dehydrate them a bit, then the treading comes, then they are left to ferment in the shade for five days. This sugary liquid is racked, has a large dose of alcohol, then is placed in pithoi jars, which are the height of a man, are buried in the ground up to the mouth, and covered with wooden plates or stones, which have been found today. The pithoi don't open until late next winter. In Greece there were three meals a day with plenty of bread, meat and wine.
