Brunost, Norwegian gastronomic treasure

Brunost is the typical Norwegian cheese, its name is due to its brown color, with a sweet and sour caramel flavor.

 It is made from whey, both cow's or goat's milk. There is a blended version of Brunost, which contains both cheese made from cow's milk and goat's milk whey, has a mild flavor, and is more popular with children.

 To make Brunost, add the buttermilk to the cream and milk, bring it to a boil, then reduce it to a simmer and stir constantly for 3 hours. Until it thickens. While this is happening, caramel and whey are added to it and it turns slightly brown. Eventually the mixture turns into a light brown paste.

 It is then removed from the heat and shaken as it cools to keep it smooth and to prevent it from turning into pimples. Then it is poured into rectangular or round molds and left to rest.

 Brunost can be eaten for breakfast, with fruit, slices of cake, and that very well.
