Delicious and exotic Gastronomy of Pucallpa

Pucallpa is a city located in the center-east of Peru, on the banks of the Ucayali River. It is the second most important city in the Peruvian Amazon, behind Iquitos. One of the main economic activities of the inhabitants is fishing, agriculture, livestock and timber extraction. It also owns a small oil refinery and a gas refinery located in the Curimaná district.

On the other hand, the city is the second most important river port in the Amazon. Most of its communications are made through the Ucayali river. The name comes from two Quechua words "Puca" (land) and "allpa" (red).

Between the Traditional dishs of the region include:

  • Patarashca: fish wrapped in bijao leaves and grilled over charcoal.

  • Inchicapi: chicken soup with peanuts, coriander and yucca.
  • Juane: chicken rice wrapped in bijao leaves and cooked.

  • Picadillo de paiche: shredded dry and salty paiche, with onion, tomato and chili pepper.
  • Tacacho con cecina: roasted green banana with pork rinds. It is served with smoked pork.

Traditional drinks are based on fruits and regional crops:

  • Masato: cooked and fermented cassava drink.
  • Aguajina: aguaje (regional fruit) crushed, strained and sweetened.
  • Chapo: ripe, cooked and beaten banana that is served cold.

Typical alcoholic drinks:

They are prepared based on pure cane brandy, macerated in roots, barks and tropical fruits (seven roots, huitochado, chuchuasi, para para, leva, clavohuasca), among others.
