Amasobho Omdabu WaseDashi: IGroninger Mosterdsoep

AmaDashi adume ngamasobho amahle kakhulu. Kukhona ethandwa kakhulu esifundeni saseGroningen okuyisibiliboco esibizwa ngeGorninger Mosterdsoep (isobho lesinaphi leGroningen).

Izithako:

• 1 inkomishi yebhekeni (150 g)
• 1 shallot ophakathi, oqoshiwe (uhlobo lukanyanisi obomvu)
• Izipuni eziyi-3/1 zebhotela (2 g)
• Isipuni esingu-1 se-Groninger grainy mustard (noma esinye isinaphi se-grainy)
• Isipuni esingu-1 Groninger mustard omnene (noma esinye isinaphi esimnene)
• 1/2 isipuni imbewu yesinaphi
• 1/2 inkomishi ufulawa ohlungiwe (50 g)
Izinkomishi ezi-4 1/5 zomhluzi wenkukhu (1 litre)
• ukhilimu 1/2 inkomishi kakhilimu omusha noma (100 ml)
• Usawoti kanye nopelepele
Ukuhlobisa:
• Ama-chives asanda kusikwa, i-watercress noma amasiki asikiwe

Ukulungiselela:

Fry the bacon in a skillet until crisp. Vumela ukukhipha ephepheni lasekhishini. Embizeni ehlukile, susa i-shallot ebhotela. Faka isinaphi nembewu. Manje engeza ufulawa bese uthela kancane esitokisini ukudala i-emulsion ebushelelezi (ebizwa nge-roux).

Ake ipheke umzuzu noma emibili. Manje engeza ukhilimu. Isizini nokunambitha. Phaka isobho ngezitsha noma amapuleti ajulile bese uhlobisa ngebhekeni elisanda kuqunjwa kanye nama-chives aqoshiwe, i-watercress noma amaliki asikiwe.
