El Cordovan alfajor it is also a regional product whose origins date back to the ancient tablet of the Arabs, which was introduced in Spain during the conquest. It was also in another conquest - this time the Spanish one - that the recipe reached Argentina and there it was transformed to adapt to local products. This is how the idea of ​​joining two tablets with fruit candy was born and thus take advantage of the production of sweets and jams that were made in many regional farms and orchards.

That was the beginning of the Cordovan alfajor that, unlike the more traditional alfajor, is not filled with dulce de leche but with fruity sweets. But in addition, the snacks, bites made with a single tablet coated with dulce de leche and coated with fondant. The convents and religious houses produced snacks for the children to take to schools and thus also became an emblem of the province.
