Chinese almond cookies

For many of us chinese sweets They are too sweet or we can't find desserts that we like so much. It is common, I prefer all the desserts and cakes from the West rather than any Asian but that is because our kitchens are different and our gastronomic customs as well. The Chinese usually finish the meal with some fruit rather than with a sweet snack like us. Also, the oven is something quite unusual in Chinese kitchens and that is why there are almost no cakes, for example.

But searching I found a cookie recipe and since I really like cookies I made it at home with wonderful results. Try then these chinese almond cookies.

  • 21 cups of flour
  • 3/4 cup of sugar
  • 1 / 4 teaspoon salt
  • 1 teaspoon baking powder
  • 3/4 cup butter
  • 1 egg
  • 1 teaspoon of almond extract
  • 1/3 cup blanched almonds
  • 2 tablespoons of water

Mix together the flour, salt, baking powder, and sugar. You cut the butter and crush it into a paste, then add the egg, the almond extract and the water and mix well until the preparation comes off the sides of the container. You finish kneading with your hands and let it rest for 1 hour. Then form balls, roll them and flatten them with your hands, place an almond in the middle, press down and bake for between 20 and 25 minutes in a strong oven.
