The recipe is very simple to prepare, and it is a healthy dish loaded with vitamins. Its preparation time is around 30 minutes and its cooking time around 45, so it is also quick to prepare. Today we are going to present you the Piperade recipe for about four people.

First of all we must of lclean the peppers well removing the seeds and chop them into pieces, scalding them in boiling water. Then we will have to chop the onion and put it over a low heat without turning any color. In said saucepan add minced garlic, tomatoes (already cut and peeled into squares) and the peppers, seasoning them and letting them cook between 30 and 40 minutes, until the tomatoes have released all their juice.

In this step we must add what is known as lady, a kind of dry and hot red pepper, which we should have had to soak from the night before. In a separate bowl, beat the eggs and add them together with the butter, stirring them until you are set. The resulting mixture of this elaboration is the Piperade.
