Irish Sauces (Part One)

When you visit Ireland and especially the Dublin region will notice that all dishes that have meat, chicken or fish are accompanied by sauces. Unlike other countries it is difficult to see the meat alone, and in this specialty of sauces one of the more traditional is the yorkshiere.

Ingredients:

- 2 tablespoons of currant syrup,
- 2 tablespoons of Spanish sauce
- 1 pinch of cinnamon,
- white pepper and
- Cayenne,
- 1 glass of white wine cut in half,
- the juice of 1/2 orange and
- zest of the rind of half an orange

For its preparation in a saucepan, put the currant syrup, the Spanish sauce, a pinch of cinnamon, a little pepper, a pinch of cayenne. the reduced wine is added, once it has boiled it is passed through the fine strainer and the juice and orange zest are added. It is rectified with salt if necessary.
