Ghoriba with almonds, Moroccan cookies

In the kitchen of Morocco or of Magreb Not only do meat dishes or soups stand out, although perhaps these are the most common, but we would also have to make a huge hole for sweets and pastries and desserts in general. In this case, in particular, we are going to know some typical Moroccan almond cakes, that is, the ghoriba.

It is, as you can see in the image, some cookies that were prepared from the Middle East but also Morocco and that, traditionally, they were almond-shaped, although today, of course, there are many other variants and we can make them from coconut. However, the traditional ghoriba are the ones that today we are going to teach you how to prepare. They are also very easy to do!

First of all we will need unsalted butter, pastry flour, icing sugar, very fine wheat semolina, salt, beaten eggs, vanilla, egg white and raw almonds, and our ingredients will be in relation to the number of cookies we want to prepare, although the elaboration is always the same.

We will melt the butter and mix it with the sugar, adding the sifted flour and the wheat semolina with a little oil to make the dough. Once it is compact, we will proceed to making balls the size of an apricot, squashing them with the hand to give it the shape of cookie. Pressing a little, we will place an almond on top of each cookie and we will bake them for about 20 minutes until they are done.

Once baked we let them cool and sprinkle them with icing sugar. That's all! We can already try the ghoriba, although the ideal would be that one day we try them in Morocco, so go ahead and discover its gastronomy while traveling.
