Mexican gastronomy: the pastes of Real del Monte

Despite its English origin, the pastes They are the distinctive dish of Real del Monte, in the Hidalgo region.

This kind of pie filled with potato or leek, according to the original recipe, is heir to the ancient traditions of English cuisine.

Mexico, a country with enormous mining wealth, for a long time held the first place as a producer of silver and Real del Monte, was one of the main producers of that metal. The invitation that Pedro Romero de Terreros made to the King of Spain with the promise of paving the road from Veracruz to Real with silver bullion is almost legendary so that the carriage would not touch the ground.

When the third Earl of Regla, in 1823, sought investors in England, the Adventurer Company of the Mines of Real del Monte, they arrived the following year bringing their technology, their traditions and their gastronomy.

They brought the Futbol soccer, a sport invented by them, and the cornish pastries which is the basis for making cakes, feet and, mainly, the pastes that kind of empanada filled with potato, leek or parsley, ground beef and black pepper, according to the original recipe.

From that time until today, this exquisite delicacy made by local women is an essential dish at any party or family gathering, symbol of the most genuine Mexican tradition.
